- Beetroot - 15.9 oz
- Chicory - 7.1 oz
- Olive Oil - 2 tablespoons
- Balsamic Vinegar - 1 tablespoon
- Meyer Lemon Juice - 1 tablespoon
- Goat cheese - 6 oz
- French Baguette - 1 piece
- Roasted Peanuts - 3 oz
Step by Step guide
Step 1
Dry the beetroot and slice it into thin pieces. Place in a bowl and add vinegar. Mix well.
Step 2
Finely chop the chicory and mix with olive oil, lemon juice, salt, and pepper.
Step 3
Cut the baguette into 4 pieces lengthwise and then halve each piece. Preheat the grill and lightly toast until golden. Let cool.
Step 4
Spread goat cheese on the toasts and top with walnuts, beetroot, and chicory.
