- Beetroot - 17.6 oz
- Tahini - 2 spoons
- Meyer Lemon Juice - 5 teaspoons
- Garlic - 1 clove
- Citrus Zest Mix - 1 tablespoon
- Ground Cumin - 1 tablespoon
- Salt - to taste
Step by Step guide
Step 1
Boil the beets until tender.
Step 2
Peel the cooked beets, removing the skin and roots, then blend until smooth in a food processor or blender.
Step 3
Add tahini or ground sesame seeds (it's best to do this in a coffee grinder or mortar), juice, a chopped garlic clove, zest, and cumin - mix well.
Step 4
Season with salt and pepper to taste.
Step 5
Serve with zucchini rings, cucumbers, crisps, or pita bread.
