Originally, pkhali was a food for monks — it is an entirely vegan Georgian appetizer. Nowadays, pkhali exists in countless variations. The base can be made from beetroot, cauliflower, spinach, carrots, or even young nettles. Chopped nuts and spices are added to the mashed vegetables, and the mixture is shaped into balls. When served, pkhali is garnished with nuts and pomegranate seeds. By the way, pkhali can work as both an appetizer and a side dish to meat.

- White Cabbage - 15 oz
- Walnuts - 5 oz
- Garlic - 4 cloves

- Cilantro - 0 oz
- Malt Vinegar - to taste

Step by Step guide

Prepare the necessary ingredients.

Boil the beets until tender; the cooking time depends on their size. Alternatively, you can buy pre-cooked beets from the store. Boil the cabbage for 40 to 60 minutes.

Chop the cilantro.

Pass the boiled vegetables through a meat grinder.

Chop the nuts with a blender or grate them.

Add the nuts to the vegetables.

Add cilantro, spices, and squeeze in the garlic.

Add vinegar and mix well.
