Originally, pkhali was a food for monks — it is an entirely vegan Georgian appetizer. Nowadays, pkhali exists in countless variations. The base can be made from beetroot, cauliflower, spinach, carrots, or even young nettles. Chopped nuts and spices are added to the mashed vegetables, and the mixture is shaped into balls. When served, pkhali is garnished with nuts and pomegranate seeds. By the way, pkhali can work as both an appetizer and a side dish to meat.
