Ingredients
- Beetroot - 3 pieces
- Tomatoes - 3 pieces
- Carrot - 1 piece
- Cucumbers - 3 pieces
- Ham - 7.1 oz
- Sour Cream - 7.1 oz
- Chicken Egg - 2 pieces
- Vinegar essence - 1 tablespoon
- Sugar - 1 tablespoon
- Salt - to taste
- Herbs - 0.4 oz
Step by Step guide
Step 1
Cut the beetroot and carrot into thin strips, peel the tomatoes and dice them. Place the vegetables in a pot, add vinegar, sugar, salt, and pour in hot water (700 ml). Simmer over low heat for 40 minutes. Then add diced potatoes (cut into strips or small cubes, as desired) and cook for another 10–20 minutes, depending on the size of the potato pieces, then cool well.
Step 2
Cut the cucumbers and ham into thin strips, chop the herbs. Add everything to the beetroot soup and mix. Cut the eggs in half.
Step 3
Before serving, place a tablespoon of sour cream and half an egg in each bowl.
