Description

In this beetroot soup, the chef of a rustic restaurant, John Smith, first slowly roasts the beets in a cooling Russian stove until they turn a caramel color, then enhances the sweetness of the beets with horseradish, mustard, and homemade smoked sour cream. It sounds too complicated, but you can easily smoke the sour cream even in a city apartment, using a saucepan and a couple of handfuls of wood chips for grilling. As a result, the soup becomes truly special: the rich caramel beetroot soup blossoms with appetizing smoky notes.

Ingredients

  • Beetroot - 21.2 oz
  • Mustard Greens - 0.9 oz
  • Creamy Horseradish - 0.9 oz
  • Non-alcoholic sparkling wine - 1 qt
  • Apple Cider Vinegar - 1.1 oz
  • Sour Cream - 10.6 oz
  • Chicken Egg - 5 pieces
  • Radish - 3.5 oz
  • Cucumbers - 3.5 oz
  • Salt - 0.5 oz
  • Dill - to taste
  • Scallions - to taste

Step by Step guide

Step 1

Wrap the beetroot in foil without peeling and roast it in a preheated oven at 392°F for one to one and a half hours (depending on the size). Then, let the beetroot cool.

Step 2

Boil the eggs hard. Then separate the egg whites from the yolks.

Step 3

Smoke the sour cream. In a large saucepan, add wood chips (2 handfuls), place a sieve on top, and set a container with the sour cream on the sieve.

Step 4

Ignite the sawdust and cover the container with a lid to let the sawdust smolder underneath. Allow the sour cream to infuse with the smoke for 5–7 minutes.

Step 5

Peel the cooled beetroot and cut it into random pieces. Add horseradish, mustard, and vinegar. Blend everything into a smooth mixture.

Step 6

Pour the mineral water into the mixture, add the egg yolks, season with salt, and whip everything together once more.

Step 7

Cut the egg whites, radishes, and cucumbers into matchsticks.

Step 8

Arrange the vegetable julienne on a plate and pour beet broth over it. Sprinkle with chopped herbs and add a spoonful of smoked sour cream.
