- French Baguette - 12.3 oz
- Thyme - 0.6 oz
- Sage - 0.2 oz
- Garlic - 0.6 oz

- Green Salad - to taste
- Pine nuts - to taste
- Chili Pepper - to taste
- Ricotta cheese - 2 lbs
- Lemon - ¼ piece
- Salt - 3.5 oz
- Freshly ground black pepper - 0.3 oz
Step by Step guide
Step 1
Prepare the pangrattato: cut the baguette into pieces and bake in the oven at 180°C for 10-15 minutes.
Step 2
Grind the resulting pangrattato with thyme, rosemary, sage, and garlic.

To make the lemon ricotta, mash the ricotta cheese with lemon zest, salt, pepper, lemon juice, olive oil, and mix thoroughly.

For the beet marinade, chop the rosemary, mint, and chili pepper and mix with mustard oil, honey, and French mustard.

Peel the beets, slice them thinly, and marinate in the resulting sauce for a day.

On the salad, place the marinated beet slices, add the artichoke paste, mix in the ricotta, and torch with a gas burner.
