Beets pickled in apple cider vinegar

Ingredients

  • Yellow Beets - 5 pieces
  • Apple Cider Vinegar - 2 fl oz
  • Sugar - 1 tablespoon
  • Olive Oil - 1 tablespoon
  • Dijon Mustard - ½ teaspoon
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Boil the beets in boiling water until tender, about 30–40 minutes, or wrap them in foil and bake at 356°F for about 1 hour.

Step 2

If the beets were boiled, rinse them under cold water, or cool them down. Peel and slice into small pieces.

Step 3

For the vinaigrette, mix the vinegar, sugar, olive oil, mustard, salt, and pepper in a bowl. Whisk well with a fork and add the beets. Toss and let marinate at room temperature for 1 hour.
