Ingredients
- Meyer Lemon Juice - 0 fl oz
- Donut Peaches - 4.4 oz
- Non-alcoholic sparkling wine - 4 fl oz
- Gingerbread-flavored syrup - 1 qt
- Frozen Raspberries - 7.1 oz
- Citric Acid - 0.9 oz
- Pea purée - 3 fl oz
- Salt - 0 oz
Step by Step guide
Step 1
First, prepare the raspberry cordial. Add 200 grams of frozen raspberries to 1 liter of sugar syrup.
Step 2
Pour everything into a saucepan, place it over medium heat, and bring to a boil.
Step 3
Remove from heat and let cool.
Step 4
Strain.
Step 5
Add citric acid and stir until dissolved. The raspberry cordial is ready.
Step 6
Combine the pureed peaches with 100 ml of sugar syrup. Heat and bring to 185°F.
Step 7
Remove from heat, cool, and strain.
Step 8
Add salt and 60 ml of raspberry cordial to the pureed peaches, stirring until dissolved.
Step 9
Prepare peach puree from 125 grams of peaches.
Step 10
Combine 40 ml of peach-raspberry syrup, lemon juice, sparkling wine, and peach puree.
Step 11
Serve.
