Description
This is a traditional hot drink originating from Turin. The recipe is based on the well-known 17th-century drink recipe 'Bavareisa', where its three components (coffee, chocolate, and cream) are not mixed but layered in a glass.
Ingredients
- Espresso - 3 fl oz
- Milk - 1 fl oz
- Cream 22% - 1 fl oz
- Liquid dark chocolate - 3.5 oz
- Cream (40%) - 3 fl oz
Step by Step guide
Step 1
Place a metal shaker in the freezer. Fill two heatproof glass cups with boiling water and set aside.
Step 2
Prepare a strong espresso.
Step 3
Combine the milk and cream in a small saucepan and heat over medium heat until boiling (about 4 minutes). Whisk in the chocolate pieces until melted in the milk (about 2 minutes).
Step 4
Pour out the boiling water from the cups and dry them. Pour a serving of espresso into each cup, then, tilting the cup slightly, slowly pour in the hot chocolate (layers should form).
Step 5
Fill the cold shaker with heavy cream and shake at least 20 times. Carefully spoon the cream foam on top of the drinks in the cups.
Step 6
Serve hot.
