Description
The quick blackcurrant jam, often referred to as 'five-minute jam,' has its advantages: it turns out less sweet, more vibrant, and retains more vitamins. However, this quick jam is unlikely to last until the end of winter. Therefore, it’s also worth preparing a couple of jars of classic, thick jam, which resembles fruit preserves; it will surely delight you until the first days of spring.
Ingredients
- Red Currant - 17.6 oz
- Water - 7 fl oz
- Meyer Lemon Juice - 1 tablespoon
- Sugar - 17.6 oz
Step by Step guide
Step 1
Rinse the currants and remove the stems.
Step 2
Place the berries in a basin or wide pot and gently mash them with a potato masher.
Step 3
Pour in the water, place over heat, bring to a boil, and simmer, stirring occasionally, for 20 minutes.
Step 4
Add sugar and pour in lemon juice.
Step 5
Simmer on low heat for another 15–20 minutes, until the jam thickens.
Step 6
Remove from heat, distribute into sterilized jars, and cover with boiled lids.
