Trim the ends of the thin green beans. Cut the wide, flat beans diagonally into strips about 2–3 cm wide.
Step 2
Cook the cut beans in salted water for 2–3 minutes, and whole beans for 4–5 minutes, until almost tender. Drain the water immediately (if the beans are not to be used right away, it’s better to rinse them in ice water).
