Description
A great reminder to all of us that kissel is not just made with fresh or frozen berries, but also with dried ones. It's especially nice to prepare this in the middle of winter when a handful of unremarkable berries turns into a truly summery dish.
Ingredients
- Sugar - ¾ cup
- Potato protein - 2 tablespoons
- Dried Barberry - 1.8 oz
Step by Step guide
Step 1
Rinse the dried blueberries (or dried rosehips) in hot water, pour 2 cups of cold water over them, and bring to a boil for 15–20 minutes.
Step 2
When the blueberries become soft, strain the broth into another pot, and mash the berries well with a wooden pestle or spoon. Pour in 1 cup of water again, bring to a boil, and strain into the pot with the broth while squeezing.
Step 3
Then add sugar, bring to a boil once more, and stir in the diluted potato starch.
