Step by Step guide
Step 1
Only the bottoms of the artichokes and the bases of their leaves are edible; the tips of the leaves are inedible. Prepare the artichokes by cutting off the stem at the base and trimming the tough parts of the leaves. Rub the bottom of the artichoke where the stem was cut with lemon to prevent browning. Use the handle of a tablespoon to remove the heart from the center of the artichokes.
Step 2
Wash the prepared artichokes, arrange them in a single layer in a pot, cover with hot water just enough to submerge the artichokes, add salt, and cook in a covered pot for 10-15 minutes. You can check if the artichokes are done by inserting a knife; if it goes in easily, they are ready.
Step 3
Transfer the cooked artichokes to a strainer with the bottoms facing up, let the water drain, then place them on a plate lined with a folded napkin.
Step 4
Arrange the artichokes in a single layer, garnished with sprigs of herbs. Serve with a wine and egg sauce or a butter and egg sauce.
