Rinse the peeled asparagus, tie it into a bundle (8-10 pieces), trim the ends evenly, and cook in salted water over high heat for 20-25 minutes. Asparagus is best when it is not overcooked; otherwise, it loses its flavor and becomes watery. As soon as the tips become tender, the asparagus is ready.
Step 3
Transfer the cooked asparagus to a sieve and let the water drain, after which you can place the asparagus on a plate covered with a napkin. The bundle of asparagus should be untied, covered with the edges of the napkin, and served at the table. Serve separately with egg sauce with wine, or egg-butter sauce, or breadcrumbs.
