Ingredients
- New Potatoes - 12 pieces
- Butter - 2 tablespoons
- Spanish onions - 1 head
- Tomatoes - 2 pieces
- Green onion tops - 4 pieces
- Cream (40%) - ½ cup
- Cilantro - 1 tablespoon
- Chopped Sage Leaves - ½ teaspoon
- Ground Cumin - ½ teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
- Melted Cheese - 8.8 oz
Step by Step guide
Step 1
Scrub the potato skins, but do not peel. Place in a pot and cover with water. Add salt and bring to a boil. Cook until tender, about 20 minutes. Drain and transfer to a bowl. Keep warm.
Step 2
Remove seeds and skin from the tomatoes and chop finely.
Step 3
Melt the butter in a skillet over medium heat. Add the finely chopped yellow onion and green onions and sauté until soft. Then add the tomatoes and cook, stirring, for 5 minutes. Add the cream, cilantro, oregano, cumin, salt, and pepper. Then add the cheese and continue cooking, stirring, until the cheese melts.
Step 4
Cut the potatoes in half and arrange on a plate. Drizzle with the sauce and serve immediately.
