Ingredients
- Veal with Marrow Bone - 5 lbs
- Mild Chili Spice - 1.8 oz
- Carrot - 4.4 oz
- Celery salt - 5.5 oz
- Onion - 2.5 oz
- Garlic - 0.9 oz
- Bay leaf - 2 pieces
- Allspice berries - 10 pieces
- Pink Himalayan Salt - to taste
- Herbs - to taste
Step by Step guide
Step 1
Place the bones in a baking dish.
Step 2
Put in an oven preheated to 356°F for 40 minutes.
Step 3
Remove the bones from the oven.
Step 4
Transfer the bones to a pot and cover with water. Place on high heat.
Step 5
Once boiling, skim off the foam and reduce the heat to medium. Cook for 3 hours.
Step 6
Chop the vegetables coarsely.
Step 7
Peel the garlic and crush it with a knife.
Step 8
Place the vegetables in the baking dish with the rendered fat. Mix well. Roast for 15 minutes at 356°F.
Step 9
Transfer the vegetables to the broth (3 hours after it starts boiling).
Step 10
Add the allspice berries and bay leaves. Simmer the broth for another 5 hours without letting it boil.
Step 11
Season the broth with salt to taste, strain it. Pour into a deep bowl, garnish with a sprig of herbs, and serve.
