Description

Bone broth is inferior to <a href="https://eda.ru/recepty/bulony/myasnoy-bulon-s-ovoschami-21625">meat broth</a> in its nutritional and flavor qualities, as bones do not contain extractive substances unlike meat; during cooking, mainly gelatinous substances and fat are extracted from the bones into the broth. Therefore, it is mainly recommended for preparing potato soups.

Ingredients

  • Chicken bones - 17.6 oz
  • Parsley - to taste
  • Carrot - 1 piece
  • Onion - 1 head
  • Water - 3 qt

Step by Step guide

Step 1

Bone broth is cooked when you want to prepare a second dish from the meat (such as cutlets, goulash, etc.).

Step 2

To ensure the bones dissolve better and faster, they should be chopped into smaller pieces.

Step 3

Place the washed and chopped bones into a pot, cover with cold water, and set to boil.

Step 4

Bone broth is cooked similarly to meat broth, i.e., at a gentle simmer while periodically skimming off the fat.

Step 5

The cooking time for bone broth is between 2.5 to 3 hours.

Step 6

To enhance the flavor of the broth, add the peeled roots, onion, and salt one hour before the cooking is finished.

Step 7

Strain the finished broth.

Step 8

Ready to serve!
