Description
In addition to boiled fish, botvinya can be served with whitefish balyk, sturgeon belly, and whitefish tesh. Instead of spinach, young nettles can be used.

- Bread Kvass - 1 qt
- Spinach - 8.8 oz
- Sorrel - 8.8 oz
- Sugar - 1 teaspoon
- Scallions - 2.6 oz
- Cucumbers - 2 pieces
- Horseradish Leaves - 1.8 oz
- Fish - 8.8 oz
- Salt - to taste
- Mustard Greens - to taste
Step by Step guide
Step 1
Sort and rinse the spinach and sorrel well; then boil the spinach in boiling water, and separately stew the sorrel in a covered pot.
Step 2
Pass the spinach and sorrel through a sieve. Place the prepared puree in a pot, add sugar, salt, a little mustard, and dilute it all with bread kvass, then add diced fresh cucumbers, chopped green onion, and dill.
Step 3
When serving, place grated horseradish and pieces of boiled fish in the bowl, which can also be served on a separate plate.
