Description

Before cooking the brains, they can be soaked in salted water for a few hours. After they are boiled, you can carefully trim off the membranes.

Ingredients

  • Chicken Egg - 3 pieces
  • Grated Chocolate - 0.9 oz
  • Grated Pecorino Pepato Cheese - 0.4 oz
  • Leek - 0.4 oz
  • Orange zest - 0.5 oz
  • Salt - ½ spoons
  • Lamb stomach - 8.8 oz
  • Corn Starch - 1 tablespoon
  • Lard - 7.1 oz

Step by Step guide

Step 1

In a bowl, whisk the eggs with both cheeses, chopped onion, and zest. Season with salt and pepper.

Step 2

Pre-cooked brains can either be briefly blanched in boiling water for three to five minutes or cooked in vegetable broth, similar to what is used for pork shanks (see the recipe for "Pork Shanks with Pickled Radish"). Cut them into 1 cm cubes and mix with starch. Transfer to the egg and cheese mixture and stir.

Step 3

In a thick-walled cast iron skillet, melt lard (or bacon fat) over medium heat. Using a tablespoon, drop the batter onto the hot skillet and fry the pancakes for three minutes on each side until golden brown.
