Ingredients
- Lemon - 2 pieces
- Artichoke bottoms - 5 pieces
- Fava Beans - 7.1 oz
- Olive Oil - ¼ cup
- Onion - 1 head
- Oregano - 1 sprig
- Pancetta - 2.1 oz
- Salt - to taste
- Frozen green bean pods - 2 cups
- Chopped Sage Leaves - ¼ cup
- Fresh Mint - 2 tablespoons
- Meyer Lemon Juice - 1 teaspoon
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Pour water into a large bowl and squeeze the juice from 2 lemons into it, then add the peels. Using a sharp knife, cut off the top third of the artichokes, removing the dark leaves until only the yellow ones remain. Then cut off the bottom with the stem and slice the artichokes in half lengthwise. Place them in the lemon water to prevent browning. Use a spoon to remove the prickly leaves and cut each half into 4 pieces. Return them to the water.
Step 2
Fill a large bowl with ice water. In a pot, bring water to a boil and add the fava beans for 1 minute, then quickly transfer them to the ice water for a short time. Drain and peel off the tough outer skin, leaving only the green inner part.
Step 3
Heat a deep skillet over medium heat. Add ¼ cup of olive oil and, when hot, add the finely chopped onion, the sprig of oregano, and the diced pancetta. Sauté for 10 minutes. Drain the artichokes and add them to the skillet, along with 2 cups of water and 1.25 teaspoons of salt. Bring to a boil, reduce the heat, and cook for about 25 minutes until tender.
Step 4
Add the fava beans and peas and cook for another 5 minutes. Remove the oregano and sprinkle with parsley and mint. Drizzle with lemon juice and sprinkle with freshly ground black pepper. Add salt if needed. Drizzle with olive oil and serve.
