Ingredients
- Olive Oil - 7 fl oz
- Sugar - 3.5 oz
- Gelatin - 0.5 oz
- Tomatoes - 2⅖ kg
- Garlic - 2 cloves
- Thyme - to taste
- Tomatoes - 8 pieces
- Basil - 4 sprigs
- Meyer Lemon Juice - to taste
- White bread - 7.1 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare sun-dried tomatoes. It's best to use tomatoes of different varieties and sizes for a more diverse flavor.
Step 2
Dry the skin removed from the tomatoes in a dehydrator or in the oven at a low temperature. Then, grind it in a mortar or coffee grinder into a powder.
Step 3
Prepare a jelly from the inner part of the tomatoes. You can squeeze fresh tomato juice from the remaining tomato fillets.
Step 4
Prepare tomato snow from freshly squeezed tomato juice.
Step 5
Prepare a jam made from olive oil. It can be used as a dressing for salads or enjoyed on its own, and should be stored in a closed container in the refrigerator.

Cut the bread into cubes about 2 cm on each side. Toast in an oven preheated to 320°F until golden brown. Crumble a few of the croutons by hand.
Step 7
Prepare a tomato sauce with garlic and basil.

Heat the tomato sauce until it comes to a boil, then add the croutons. Stir constantly to soak them in the sauce until they are completely soft. You can check their softness by inserting a skewer or toothpick into them.

Spread the butter marmalade on a plate, sprinkle it with bread crumbs, arrange the tomatoes seasoned with salt and oil, sun-dried tomatoes, a toast soaked in tomato sauce, tomato jelly, powdered skin, and basil leaves.
