  • Butter - 1.8 oz
  • Onion - 2 lbs
  • Brown Sugar - 1 tablespoon
  • Thyme - 1 sprig
  • Bay leaf - 3 pieces
  • Chicken Broth - 1 qt
  • Cider - 5 fl oz
  • White bread - 4 slices
  • Cheshire Cheese - 3.5 oz
  • Parsley - 1 bunch

Step by Step guide

Step 1

Heat the butter in a pot over medium heat, add the onion, sugar, and herbs, and sauté uncovered, stirring, for about 40 minutes until the onion becomes sticky and brown. Pour in the cider and simmer until half evaporates, then add the broth, bring to a boil, and cook for 20 minutes over medium heat.

Step 2

Preheat the oven grill, butter the slices of bread, and bake until golden brown, sprinkle with cheese, and wait for the cheese to melt in the oven. Place the cheese-covered bread slices in a bowl of soup and garnish with parsley.
