Broccoli and Mango Soup with Ginger
Ingredients
- Safflower Oil - 2 tablespoons
- Onion - 1 head
- Garlic - 1 clove
- Grated Ginger Root - 1 piece
- Black Bean Paste - 2 tablespoons
- Broccoli - 14.1 oz
- Mango - 1 piece
- Chicken Broth - 30 fl oz
- 10% cream - 5 fl oz
- Mild Chili Spice - 1 piece
Step by Step guide
Step 1
In a pot, heat the sunflower oil. Add finely chopped onion, minced garlic, grated ginger root, curry paste, chopped broccoli, and peeled and finely chopped mango (set aside a few pieces for garnish). Cook on low heat, stirring and avoiding browning.
Step 2
Pour in the broth, bring to a boil, reduce the heat, and simmer until the broccoli is tender but retains its color.
Step 3
Slightly cool, season with salt and pepper, and blend until smooth. Add the cream.
Step 4
Gently heat and pour into bowls. Top with finely chopped mango pieces and minced chili.
