Description
The most tedious part of preparing this soup – the vegetable prep – can be reduced to just a few minutes using a steamer. You won’t need to worry about the outcome: both the broccoli and zucchini will soften just enough in the specified time, just as classic creamy soup recipes require.
Ingredients
- Broccoli - 1 piece
- Courgette - 2 pieces
- Goat cheese - 3.5 oz
- Olive Oil - 5 teaspoons
Step by Step guide
Step 1
Separate the broccoli into florets and place them in a steamer for 4 minutes.
Step 2
Peel the zucchini, remove the seeds. Cut it into large pieces and place them in a second steaming container. Cook together with the broccoli for another 4-5 minutes.
Step 3
In a deep pot, bring the broth to a boil. Transfer the cooked vegetables from the steamer to a blender, add olive oil, and blend until just combined, without turning it into a puree. Add the mixture to the broth, stir, bring it back to a boil, and then remove from heat.
Step 4
Cut the goat cheese into small pieces. Serve the soup in warmed bowls, placing 3-4 pieces of cheese in each portion.
