Ingredients
- Broccoli - 1 head
- Celery salt - 1 piece
- Mizuna - 3.5 oz
- Arugula - 1 bunch
- Young Spinach "Belaya Dacha" - 2.5 oz
- Flower Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Boil the broccoli florets separated from the stems in different pots for 5–7 minutes (drop into boiling salted water). Do not discard the broth.
Step 2
Boil the peeled and diced celery root (drop into boiling water and cook until soft. I used half of the root).
Step 3
Blend the broccoli, celery root, spinach, arugula, and mizuna in a blender, adding a little broth to make it easier to blend.
Step 4
Pour the resulting mixture into a pot.
Step 5
Dilute with the remaining broth to the desired consistency (I prefer a thicker version).
Step 6
Season with salt and pepper to taste.
Step 7
Serve with cream or goat cheese/feta.
