Ingredients
- Ghee - 3.5 oz
- Onion - 1 head
- Carrot - 1 piece
- Wheat Flour - ¼ glasses
- Chicken Broth - 2 glasses
- Broccoli - 1 head
- Ground Nutmeg - 0,1 teaspoons
- Hard Cheese - 7.8 oz
- Salt - to taste
- Milk - 1 glass
- Ground Black Pepper - to taste
- Cream - 1 glass
Step by Step guide
Step 1
Grate the cheese.
Step 2
Wash the broccoli, dry it, and cut it into small florets.
Step 3
Add the broccoli to a pot of boiling salted water and let it cook for 3 minutes.
Step 4
Immediately transfer the florets from the boiling water to a bowl of ice water or cold water.
Step 5
Wash, peel, and chop the carrots.
Step 6
Sauté the onion and carrot in butter (1–2 tablespoons). Season with salt and pepper. The onion should turn golden. Be careful not to overcook; the vegetables should retain their shape.
Step 7
In a pot, melt 60 grams of butter. Add 1/4 cup of flour. Stirring continuously, cook for about 3–4 minutes. Gradually pour in the mixture of milk and cream, followed by the broth. Add nutmeg and cover, cooking for about 20 minutes. Then add the onion, carrot, and broccoli, and cook for an additional 30 minutes.
Step 8
After 25–30 minutes, remove the lid and mash the vegetables with a potato masher.
Step 9
Add half of the grated cheese. Stir to allow the cheese to melt.
Step 10
You can sprinkle cheese on top before serving.
