Ingredients
- Broccoli - 11.3 oz
- Salmon - 4.2 oz
- Water - 17 fl oz
- Sweet Chili Sauce - 0 fl oz
- Sour Cream - 2.8 oz
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Blanch fresh broccoli florets (you can use frozen broccoli, but be sure to thaw it first) until slightly tender, about 2–3 minutes. Then drain and plunge into ice water to preserve the color. Once cooled, blend the broccoli with vegetable broth or the water it was cooked in until smooth. Bring the resulting puree to a boil, adding salt and pepper to taste.
Step 2
Meanwhile, sear the fillet of chilled salmon on both sides with sweet chili sauce, using a splash of vegetable oil and a preheated skillet, for 5 to 8 minutes.
Step 3
Pour the puree into a plate and place a slice of fish in the center. Drizzle green oil or any other vegetable oil infused with spices to taste over the top. Serve sour cream on the side.
