Broccoli Gratin with Cheese-Mustard Crust
Ingredients
- Broccoli - 1½ kg
- Onion - 2.8 oz
- Garlic - 4 cloves
- Parmesan Cheese - 3.2 oz
- Butter - 4 spoons
- Whipped Cream - ½ glasses
- English Dry Mustard - ½ spoons
- Breadcrumbs - 2½ glasses
- Dijon Mustard - 4 spoons
- Salt - to taste
- White Pepper (whole) - to taste
Step by Step guide
Step 1
In a saucepan, melt the butter and sauté the chopped onion and garlic for about four minutes, until softened.
Step 2
Mix the mustard powder with half of the Dijon mustard, add the breadcrumbs, and transfer to a saucepan. Sauté, stirring, for another eight minutes until golden crumbs form. Season with salt and pepper.
Step 3
When the mixture has cooled, add 70 g of grated Parmesan cheese and mix well. The cheese-mustard coating is ready.
Step 4
Wash the broccoli, separate it into florets, and cook in generously salted boiling water for three minutes. Drain in a colander, rinse with cold water to stop the cooking process, and place on paper towels.
Step 5
Preheat the oven to 356°F. Grease a glass baking dish with butter. Dip the broccoli into a mixture of cream, Dijon mustard, and 20 grams of grated Parmesan cheese, then transfer it to the dish and sprinkle with a cheese-mustard crumb topping. Bake until golden brown, about 30 minutes.
