A very quick and easy-to-make soup that is perfect for a light dinner.
Ingredients
- Broccoli - 7.1 oz
- Courgette - 3.5 oz
- Natural Yogurt - 4.4 oz
- Salt - to taste
- Chicken Broth - 10 fl oz
- Paprika - to taste
Step by Step guide
Step 1
In boiling (!) water, add the washed broccoli florets and the zucchini cut into large cubes. Season with salt (to taste). Cook for 3–5 minutes.
Step 2
Drain the vegetables in a colander, reserving 300 ml of the broth. Take a few broccoli florets and set them aside on a plate. Place the remaining vegetables in a blender bowl, blend, adding the broth and paprika. Pour the mixture back into the pot and bring to a boil.
Step 3
Serve in bowls. Add 3 tablespoons of natural yogurt to each bowl and garnish with the reserved broccoli florets.
