Ingredients
- Butter - 0.9 oz
- Olive Oil - 1 teaspoon
- Spanish onions - 1 head
- Garlic - 1 clove
- Broccoli - 14.1 oz
- Fresh basil leaves - 3.5 oz
- Chicken Broth - 4 cups
- 33% Cream - 1 cup
- Meyer Lemon Juice - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Heat a deep skillet over high heat, add a mixture of butter and olive oil, onion, and garlic, and sauté for 5 minutes until the onion becomes translucent and golden. Add the broccoli and cook for another minute. Add the broth, bring to a boil, and simmer for 8–10 minutes. Add the spinach and cook for another 1–2 minutes.
Step 2
Pour the mixture into a blender and blend until smooth.
Step 3
Add the cream, lemon juice, salt, and pepper.
Step 4
Serve in a bowl, add a spoonful of sour cream, and sprinkle with freshly ground pepper.
