Bruschetta with Mushrooms and Eggplant
Ingredients
- Ciabatta - 1 piece
- Olive Oil - 2 tablespoons
- Eggplants - 0.4 pieces
- Pickled Chanterelles - 2 pieces
- Onion - ½ piece
- Garlic - 1 clove
- Semi-soft cream cheese - 2 tablespoons
- Ocean salt - to taste
- Ground Black Pepper - to taste
- Cress salad - to taste
Step by Step guide
Step 1
Toast the bread in a hot dry skillet on both sides until lightly browned.
Step 2
Cut the eggplant into small cubes.
Step 3
Finely chop the garlic.
Step 4
Do the same with the onion.
Step 5
Chop the mushrooms very finely.
Step 6
Add the onion to the heated oil in the skillet.
Step 7
After 3 minutes, add the eggplant and stir.
Step 8
After 3-4 minutes, add the mushrooms and stir. Reduce the heat to medium.
Step 9
Cover with a lid.
Step 10
After 4-5 minutes, add salt, a bit of ground pepper, and stir.
Step 11
Add the garlic and sauté for about another minute.
Step 12
Spread cream cheese on the toasted bread.
Step 13
Top with the sautéed filling.
Step 14
Garnish with herbs and serve.
