Bruschetta with Sautéed Tomatoes and Shrimp
Ingredients
- Peeled Cooked Shrimp - 14.1 oz
- Tomatoes - 2 pieces
- White bread - 12 slices
- Ketchup - 2 tablespoons
- Garlic - 1 clove
- Parsley - 0.7 oz
- Olive Oil - 2 tablespoons
- Rice Vinegar for Sushi - 1½ tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Leave some of the shrimp (cooked, peeled), and finely chop the rest and transfer to a bowl. Add the finely chopped tomato, ketchup, minced garlic, and parsley. Pour in the olive oil and rice vinegar, season with salt and pepper. Mix well and send to sauté in a pan.
Step 2
Lightly toast the olive oil-sprayed pieces of bread on the grill or in a pan (can be substituted with a toaster) on both sides until golden brown.
Step 3
On a plate, arrange the toasted bread, top each slice with 1 tablespoon of the shrimp-tomato mixture, and garnish with shrimp and fresh herbs.
