Description
After the meat starts boiling, you can keep the water and just remove the foam. This will make the broth richer and less transparent. Instead of pork belly, you can use beef brisket, but the meat should be boiled for about an hour.

- Potato - 2 pieces
- Salted pork belly - 7.1 oz
- Buckwheat Groats - ½ cup
- Carrot - 1 piece
- Onion - 1 head
- Bay leaf - to taste
- Green peppercorns - to taste
- Salt - to taste
- Spices - to taste
Step by Step guide
Step 1
Rinse the pork, cover it with cold water, and place the pot on the stove. Once the water starts boiling, drain it, rinse the pork again in cold water, cover it with cold water once more, put it on the heat, and boil for 40 minutes.
Step 2
Add the peeled and chopped potatoes to the pot. When it boils, add the rinsed buckwheat groats.
Step 3
Sauté the finely chopped onion and carrot until the onion is golden.
Step 4
Once the potatoes are cooked, add the sautéed onion and carrot to the pot, along with the bay leaf, pepper, finely chopped garlic to taste, and spices.
Step 5
Cook for another 5 minutes.
