Description
Southeast European okroshka — tarator. A cold soup made from sour milk (you can use, for example, yogurt), cucumbers, walnuts, and dill. A favorite summer soup among the residents of Bulgaria.
Ingredients
- Cucumbers - 17.6 oz
- Kefalotyri cheese - 17.6 oz
- Garlic - 3 cloves
- Walnuts - 1.8 oz
- Dill - 1.1 oz
- Salt - to taste
- Olive Oil - to taste

Prepare the necessary ingredients.

Peel the cucumbers.
Step 3
Dice the cucumbers into small cubes. You can also grate them, but this will change the appearance and texture of the soup.

Whisk the katyk until smooth and well combined.
Step 5
Mix it with cucumbers.

Chop the garlic.

Chop the dill.
Step 8
Chop the nuts.

Add the minced garlic, dill, and nuts, and season with salt to taste. If you prefer a slightly thinner soup, add a little water.
