Description

You can make a burger sauce like this: for 10 servings, take 200 grams of mayonnaise, 50 grams of ketchup, 10 grams of Worcestershire sauce, 20 grams of chopped shallots, 15 grams of mustard, 20 grams of soy sauce, 10 grams of sesame oil, and 10 grams of rice vinegar — and blend everything together.

  • Fatty Beef - 1.4 oz
  • Pickled Cauliflower - 0.4 oz
  • Spanish onions - 0.2 oz
  • Iceberg Lettuce - 0.7 oz
  • Sweet Red Onion - 0.2 oz
  • Cheese Spread - 0.7 oz
  • Potato - 4.2 oz
  • Corn Flour for Polenta - 0.7 oz
  • Vegetable Oil - 1 tablespoon
  • Vegetable Oil - 1 qt
  • Sesame bun - 1 piece
  • Ketchup - to taste
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Grind the beef shoulder with the fat using a coarse meat grinder, add salt and black pepper, and shape the resulting mixture into a patty. Fry in vegetable oil on a grill pan until cooked to your desired doneness.

Step 2

Cut the potatoes into thick sticks, then coat them in cornmeal and deep-fry.

Step 3

Cut the round burger bun in half and lightly toast the inner sides on a grill pan. On the bottom half, place some iceberg lettuce, then add burger sauce, followed by the patty. Drizzle with cheddar cheese sauce, then top with sliced tomatoes, cucumbers, thin rings of red onion, and sprinkle with crispy fried onions. Cover with the top half of the bun.

Step 4

Serve the burger with French fries and ketchup.
