Ingredients
- Olive Oil - 1 tablespoon
- Onion - 1 head
- Bacon - 8.8 oz
- Salad Potatoes - 2 pieces
- White Cabbage - 17.6 oz
- Chicken Broth - 6 cups
- Chopped Sage Leaves - 2 tablespoons
- Salt - to taste
Step by Step guide
Step 1
Chop the onion and bacon. Shred the cabbage and cut the potatoes into 1 cm cubes.
Step 2
In a heavy-bottomed pot, heat the olive oil over medium-high heat and sauté the onion and bacon for 3 minutes until the onion becomes soft.
Step 3
Add the cabbage and potatoes. Cook, stirring, for 2 minutes. Pour in the broth and bring to a boil. Reduce the heat to medium-low and cook uncovered for 15 minutes until the potatoes are done. Season to taste.
Step 4
Ladle the soup into bowls, garnish with parsley. Serve with rustic bread.
