Description
Poutine, Quebec's contribution to the 'Golden Thousand.' French fries topped with cheese and a brown gravy made from meat broth. While cheese curds are most commonly used in poutine, cheddar also works well. The premiere was just before the New Year, but we made some edits to the video.
Ingredients
- Potato - 4 pieces
- Campbell's Beef Broth - 25 fl oz
- Corn Starch - 2 spoons
- Water - 0 fl oz
- Butter - 5 oz
- Wheat Flour - 0 oz
- Garlic - 2 cloves
- Cheshire Cheese - 5 oz
- Vegetable Oil - 1½ l
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
In a small bowl, mix the water with the starch.
Step 3
Peel the potatoes and cut them into sticks.
Step 4
Place in cold water for one hour.
Step 5
Then, dry the potatoes with paper towels. Heat the frying oil to 345°F.
Step 6
Fry the potatoes in oil. Place them on dry paper towels.
Step 7
In a large saucepan, melt the butter, add the flour, and cook, stirring, for 5 minutes until the mixture turns golden brown. Add the finely chopped garlic and cook for an additional 30 seconds.
Step 8
Then pour in the broth and bring to a boil, stirring. Add the cornstarch mixed with water and cook until the sauce thickens. Season with pepper and salt if needed.
Step 9
Heat the oil to 200 degrees and fry the potatoes again until golden brown, then drain off any excess fat.
Step 10
Place the cooked potatoes in a deep plate, season with salt, add a ladle of sauce, and mix well. Drizzle with additional sauce on top, add slices of cheese, and season with freshly ground pepper and salt.
