Caramelized Turnips and Shallots

Ingredients

  • Turnips - 28.2 oz
  • Yellow Beets - 28.2 oz
  • Shallot - 10 pieces
  • Olive Oil - 2½ tablespoons
  • Coarse Salt - to taste
  • Ground Black Pepper - to taste
  • Red Wine Vinegar - ¾ cup
  • Bay leaf - 2 pieces
  • Thyme - 6 sprigs
  • Brown Sugar - ¼ cup
  • Butter - 3 tablespoons

Step by Step guide

Step 1

Peel the turnips and cut them into medium pieces. Peel the shallots.

Step 2

Preheat the oven to 392°F.

Step 3

Place the vegetables on a baking sheet and drizzle with olive oil, season with salt and pepper, toss, and spread in a single layer. Bake in the oven for about 35 minutes until tender and golden.

Step 4

In a saucepan, combine the vinegar, bay leaves, and thyme. Bring to a boil and reduce by about half, around 10 minutes. Add the sugar and 0.5 teaspoons of salt. Stir, add the butter, and cook over medium heat until it becomes syrupy, about 10 minutes. Remove the thyme and bay leaves.

Step 5

Drizzle the sauce over the vegetables and toss. Serve immediately.
