Ingredients
- Butter - 0.7 oz
- Toasted Cumin Seeds - 0.4 oz
- Onion - 2 heads
- Garlic - 3 cloves
- Carrot - 2 lbs
- Milk - 17 fl oz
- Coconut Milk - 1 can
- Chicken Broth - 8 fl oz
- Spices - to taste
Step by Step guide
Step 1
Sauté the cumin seeds in a heavy-bottomed pot until fragrant. Add the butter and finely chopped onion, and sauté until translucent.
Step 2
Add the minced garlic and carrot, and sauté for 2 minutes.
Step 3
Add the coconut milk, broth, and milk. Season with spices and simmer for 1 hour.
Step 4
When the carrot is soft, transfer everything to a blender and blend or strain through a sieve.
Step 5
Serve with green onions or cilantro.
