Peel the carrot and use a vegetable peeler to cut it into evenly thin strips, moving along the entire length of the carrot and continuously turning it in a circular motion—this will ensure the carrot ribbons are uniform and of the same length. Place them in a dry bowl.

Pour vegetable oil into a deep saucepan, ensuring the bottom is covered by about 2 inches. Heat the oil to 374°F.

Combine a few pinches of salt and the crushed thyme leaves in a separate dry bowl, and gently rub them together with your hands.

Carefully immerse the carrot strips in the boiling oil in batches and fry for one to two minutes. Then, using a slotted spoon, transfer the golden-brown carrots to paper towels — they should cool for five to seven minutes while the towels absorb any excess oil.
