There's something vaguely familiar about the combination of ingredients. Cumin, coriander, carrot, and fragrant sauté... Doesn't it remind you of anything? It's the familiar seasoning for pilaf, known as zirvak. Here, it shines without any rice, and very successfully. These fritters can be served as an appetizer with a slice of lemon, yogurt, or crumbled feta. Alternatively, they can be used as a side dish, for example, with braised lamb.
Ingredients
- Carrot - 17.6 oz
- Onion - 1 head
- Garlic - 1 clove
- Cilantro - 1.8 oz
- Wheat Flour - 1.8 oz
- Chicken Egg - 2 pieces
- Toasted Cumin Seeds - 1 tablespoon
- Coriander essential oil - 1 tablespoon
- Olive Oil - 1 fl oz
- Natural Yogurt - to taste
- Lemon - to taste
Step by Step guide
Step 1
Grate the carrots and onions, and mince the garlic.
Step 2
Sauté the cumin and coriander until fragrant, then grind them in a blender or mortar and pestle.
Step 3
Combine the vegetables, chopped cilantro, and spices.
Step 4
Stir in the flour and eggs, and add salt.
Step 5
Fry the pancakes in preheated oil until golden brown on both sides. Serve with yogurt and a wedge of lemon.
