Ingredients
- Carrots - 17.6 oz
- Onion - 2 heads
- Butter - to taste
- Vegetable Broth - 1 qt
- Orange Juice - 1 cup
- Freshly squeezed lemon juice - 2 tablespoons
- 22% Cream - 3 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel and dice the carrots and onion into small cubes. Place them in a pot with heated butter and sauté on low heat until cooked.
Step 2
Pour in the vegetable broth and bring to a boil. Remove the soup from the heat and blend it with an immersion blender until smooth.
Step 3
Then return the soup to the stove, add the cream, orange juice, and lemon juice. Season with salt and pepper, and bring to a boil again.
Step 4
When serving, you can sprinkle the soup with Parmesan cheese and add croutons.
