Ingredients
- Water - 1 qt
- Rice - 5.3 oz
- Carrot - 28.2 oz
- Butter - 3 tablespoons
- Milk - 17 fl oz
- Sugar - 1 teaspoon
- Salt - 2 teaspoons
Step by Step guide
Step 1
Peel and wash the carrots, then cut them into thin slices. Place them in a pot, add 60 milliliters of water, 1 tablespoon of butter, 1 teaspoon of salt, and the same amount of sugar, and simmer for 5–10 minutes.
Step 2
After that, add the rinsed rice, pour in 1.25 liters of water, cover with a lid, and cook on low heat for 40–50 minutes. Then, strain the mixture through a sieve, reserving 2 tablespoons of cooked rice (without carrots) for garnish.
Step 3
Dilute the resulting puree with hot milk and salt to taste. When serving, add butter to the soup and place the cooked rice on top. Serve with croutons.
