Carrot Soup with Coconut Milk

Ingredients

  • Olive Oil - 4 tablespoons
  • Onion - 1 head
  • Fennel - ½ bunch
  • Minced garlic - 1 clove
  • Vegetable Broth - 24 fl oz
  • Orange Juice - 8 fl oz
  • Coconut Milk - 4 fl oz
  • Radish - 4 fl oz
  • Carrots - 24.7 oz

Step by Step guide

Step 1

In a medium saucepan, heat 2 tablespoons of olive oil over medium heat.

Step 2

Add the onion, fennel, and garlic, and cook for 5 minutes or until softened.

Step 3

Add the carrots and cook for another 5 minutes, reducing the heat if necessary to prevent the vegetables from browning.

Step 4

Add the broth or water and orange juice, and simmer for 10 minutes or until the carrots are tender.

Step 5

Add the coconut milk, season with salt and pepper if desired, and cook for another 10 minutes.

Step 6

Pour the soup into a blender and blend until creamy.

Step 7

Serve hot or cold, drizzled with remaining olive oil and sprinkled with radish.
