Ingredients
- Olive Oil - 4 tablespoons
- Onion - 1 head
- Fennel - ½ bunch
- Minced garlic - 1 clove
- Vegetable Broth - 24 fl oz
- Orange Juice - 8 fl oz
- Coconut Milk - 4 fl oz
- Radish - 4 fl oz
- Carrots - 24.7 oz
Step by Step guide
Step 1
In a medium saucepan, heat 2 tablespoons of olive oil over medium heat.
Step 2
Add the onion, fennel, and garlic, and cook for 5 minutes or until softened.
Step 3
Add the carrots and cook for another 5 minutes, reducing the heat if necessary to prevent the vegetables from browning.
Step 4
Add the broth or water and orange juice, and simmer for 10 minutes or until the carrots are tender.
Step 5
Add the coconut milk, season with salt and pepper if desired, and cook for another 10 minutes.
Step 6
Pour the soup into a blender and blend until creamy.
