Carrot Soup with Croutons
Ingredients
- Celery salt - 7.1 oz
- Carrot - 2 lbs
- Butter - 1.4 oz
- Ground coriander - 1½ teaspoons
- Red Curry Powder - ¼ teaspoon
- Chopped Green Onions - to taste
- Chicken Broth - 1 qt
- Sour Cream - to taste
- Coarsely Ground Rye Flour - to taste
Step by Step guide
Step 1
Chop the carrots and celery root into large pieces.
Step 2
In a large pot, heat the butter and add ¼ cup of water. Sauté the vegetables.
Step 3
After 20 minutes, add the coriander and curry powder. After another 5 minutes, pour in the broth. Bring to a boil, then simmer on low heat.
Step 4
Remove from heat and blend directly in the pot with an immersion blender.
Step 5
Pour the soup into bowls, add cilantro, sour cream, and croutons.
