- Milk - 25 fl oz
- Cauliflower - 1 head
- Chives - to taste
- Grated Pecorino Pepato Cheese - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Melt a piece of butter in a pot. Add finely chopped onion and minced garlic and sauté until soft, without browning.
Step 2
Add the cauliflower cut into small pieces, sauté for a minute, and pour in the milk. Bring to a boil, reduce the heat, and cook until the cauliflower is tender.
Step 3
Blend the soup until smooth and add the Parmesan. Season with salt and pepper.
Step 4
Pour into bowls, sprinkle with freshly ground pepper and chives.
