- Olive Oil - 1 tablespoon
- Onion - 1 head
- Garlic - 2 cloves
- Fresh Bay Leaf - 1 piece
- Potato - 1 piece
- Cauliflower - 1 piece
- Crème fraîche - 3 tablespoons
- Stilton Cheese - 8.8 oz
Step by Step guide
Step 1
In a large pot, heat the olive oil and add the finely chopped onion and minced garlic. Sauté for 2-3 minutes until soft. Add the bay leaf, the peeled and diced large potato, and the large cauliflower head broken into florets. Add 1.5 liters of cold water, bring to a boil, reduce the heat, and simmer for 15-20 minutes until the vegetables are tender.
Step 2
Remove the bay leaf and blend the soup until smooth. Pour back into the pot and add the crème fraîche and crumbled cheese. Return to heat and warm, stirring until the cheese melts. Season with salt and pepper.
