Ingredients
- White bread - 3 pieces
- Butter - 3 tablespoons
- Grated Pecorino Pepato Cheese - 2 tablespoons
- Wheat Flour - 0.3 cups
- Milk - 16 fl oz
- Cauliflower - 2 lbs
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Grated Chocolate - 0.4 oz
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
In a food processor, grind the pieces of bread with Parmesan until crumbly.
Step 3
In a large saucepan, melt the butter over medium heat. Add the flour and sauté for a minute. Then gradually add the milk, whisking continuously to avoid lumps.
Step 4
Next, add the cauliflower cut into small florets, season with salt and pepper. Bring to a boil, reduce the heat, cover, and cook for 5 minutes. Remove from heat and stir in the Gruyère.
Step 5
Transfer the cauliflower to a baking dish and sprinkle with the bread crumbs. Cover with foil and bake until tender for 20 minutes.
Step 6
Remove the foil and brown the gratin for another 20 minutes.
