- Vegetable Oil - 2 tablespoons
- Cauliflower - 17.6 oz
- Milk - 1 qt
- Wheat Flour - 2 tablespoons
- Salt - to taste
- 20% Sour Cream - 5.3 oz
- Grated Pecorino Pepato Cheese - 3.5 oz
- Ground Black Pepper - to taste
- Ground Nutmeg - to taste

Boil the cauliflower in salted water.

Heat a deep skillet with vegetable oil, add the flour, and sauté for 1-2 minutes, stirring constantly. Then, reduce the heat and gradually add the milk, mixing quickly. At first, it will form dry crumbs; add more milk and stir. Repeat until you achieve a sauce-like consistency similar to sour cream.
Step 3
Keep the skillet on low heat during this time. Then add the sour cream, season with salt and pepper. Add a pinch of nutmeg, remove from heat (the entire sauce preparation takes about 10-15 minutes).
Step 4
Place the boiled cauliflower, separated into florets, in a baking dish (ceramic or glass), pour the sauce over it, sprinkle with a thick layer of grated cheese, and place it in a preheated oven until the cheese melts and acquires a beautiful golden color.
