Ingredients
- Coarse Salt - to taste
- Cauliflower - 15.9 oz
- Red Bell Pepper - 1 piece
- Light raisins - 6.7 oz
- Pickled peppers - 8 pieces
- Onion - 1 head
- Olive Oil - 1 cup
- Garlic - 10 cloves
- Wine Vinegar - 3 tablespoons
- Sugar - to taste
- Black peppercorns - 2 tablespoons
- Bay leaves - 3 pieces
- Oregano - 2 tablespoons
- Chopped Fresh Thyme - 2 tablespoons
Step by Step guide
Step 1
Bring salted water to a boil in a large pot. Boil the cauliflower until tender for 2-4 minutes. Use a slotted spoon to remove the cauliflower and place it in a bowl of ice water; let it cool. Repeat the same process with the bell pepper. Drain the water and transfer the vegetables to a bowl, adding the raisins, pickled peppers, and onion.
Step 2
Heat the oil in a skillet over high heat and add the garlic. Sauté until golden brown for 10-12 minutes. Add the vinegar, sugar, pepper, and bay leaves; bring to a boil. Cook until the sugar dissolves for 1-2 minutes. Add the oregano and thyme; pour the mixture over the vegetables, stirring while shaking the bowl. Serve the dish chilled.
